Fred is Done


The smoke detector went off, even though I opened two windows. And sure enough, Fred was done! I used the instant read thermometer to be sure. Ideally, when the chicken comes out he should be 155 degrees, and he will rise to about 165 as he sits. According to my instant read Fred is at about 180 degrees, but he tasted great so I think maybe my thermometer is broken. 

Fred is gorgeous, plump and golden brown and surrounded by delicious salty pan juices. I toss thyme leaves in the pan juices, then swirl them around and spoon the juice over Fred, then I let him sit for a while to absorb his reincarnation from little kosher chicken to a golden god of roasted poultry. 

Thomas would be proud, I think.
